fix: Usage of Cloud Gateway vs Gateway in multitenancy for v3

This PR corrects the article about multi-tenancy for v3. The Cloud Gateway was replaced by API Gateway, there are not two similar applications at the moment. It also fixes small bugs in JSON and YAML docs.
