Don't include the custom theme in the docs

The custom theme is processed by mkdocs while building the docs. It doesn't need to be included as plain assets, as well. Also, the favicon is not in use anymore since v1.21. Remove it. Signed-off-by: Tom Wieczorek <[email protected]>
