We need to use redis-stack-server so that we can test the Redis modules in use:

Adding support for cluster specs will likely be more difficult and require adding a config matrix

Fixes #23

I don't know why I didn't try this before 🙃

This is also what Cluster does, except it uses REDIS_CLUSTER_URL
