docs/MySQL: Fix MariaDB/MySQL copy-paste error

I'm updating these docs in quintuplicate here, I'm pretty happy
there's only one copy-paste error of this sort.

For correctness this requires backfilling the current contents of all tables from the source, and so we prefer to avoid it as much as possible. It's much easier to just set up your binlog retention with enough wiggle room to recover from temporary failures.
