Update Quarkus example to 3.5.0

- Adapted chicory API usage to latest version from main
- Upgraded example to quarkus 3.5.0 (update pom.xml)
- Migrated javax packages to jakarta packages
- Added logging to resources
- Simplified Model classes
- Updated demo to use Java 17
