I haven't check your stuvusIT/nginx role but, on our experience, the learning curve to adopt a role is much easier when it integrates at least some basic configuration of components like its webserver or proxy (Apache or Nginx) and its MTA (Postfix, exim,...). (And Sympa Apache configuration is always particularly tricky :)
So I think it's not a bad idea to integrate Apache and/or Nginx configuration, and it can be optional or complementary with a generic role as yours.
I would be glad to participate on this work. (And, by the way, sorry I let the work on this role since a few month for other urgent matters, I'll come back to update our Sympa to debian buster)
