Improve documentation around limitations of using default variables for configuration

We generally recommend avoiding @use ... with and !default variables for configuration in favor of encapsulating configurable styles in a mixin. We should add some documentation to the website clarifying this and giving examples of how to adapt code using !default to instead use mixins.
