roundcube has a custom use of stubetc by adding a file to /etc before creating the image. One could cookfs that file into another object and use rumprun-bake -m to include it, but the roundcube documentation also does not mention where to perform the baking step, hence making it difficult to implement/document the suggested approach.

Noted.
The roundcube package needs a rethink -- unlike the other packages we currently have where a package only provides what is needed to build the application as a unikernel and leaves the rest to the user to add, the roundcube package is mixing up what should be deployment-time configuration ("where is service X") with build-time configuration ("what is needed to run roundcube").
