[WAIT] Update language plugin for mkdocs

In this order:

• We wait for Allow later versions of mdpo - fix install error mondeja/mkdocs-mdpo-plugin#66 to be merged
• update the dependencies in the requirements
• add the docs requirements to the pyproject.yml
