Ability to map CALIBRE_TEMP_DIR via a docker environment variable
Reason for change
I'm finding calibre excruciatingly slow on top of a linux host with an i5-9600T, 32GB ram and a 6 disk btrfs raid1 array (which is fine for plex etc). A tip picked up from some research recommends setting the calibre temp directory to an ssd but this isn't an environment variable option via the docker image at the moment.
