Automatic Closing of Stale Issues

Hello,

I've noticed that many of the issues in this repository seem to be stale. This makes it difficult to navigate through the >200 issues to determine if someone else has encountered the same problem, potentially leading to redundant issues being created.

To improve this, I recommend adding a GitHub Action to automatically close issues that are older than a certain age and have had no recent activity. This would help in keeping the issue tracker more manageable and current.

I'm more than happy to put in a PR to set up this workflow if it would be helpful.

We already do this for jitsi-meet, I'll port over the config to this repo and others.
