Have you considered EchoSVG? It's an Apache Batik fork that has made some significant strides in rasterizing Mermaid diagrams.

Note that there are a number of outstanding issues relating to how Mermaid produces non-conformant SVG files. See the following issues for details:

• Render diagrams using non-browser-based rendering libraries mermaid-js/mermaid#2485
• Replace foreignObject with standard SVG mermaid-js/mermaid#2688 (comment)
