Thanks @gilesknap for guidance on Slack. This replaces the boilerplate
example-config/, which does not result in a working IOC, with MotorSIM-specific configuration copied from https://github.com/epics-containers/example-services/tree/main/services/bl01t-mo-sim-01/config.
