I can't know for sure what are the steps to test as I don't have Big Sur since long.
Though, I sometimes get a random reboot after I put my macbook to sleep (closing the lid).
I'm not sure if regular Sleep or Safe sleep is the issue, as well as on battery or plugged.

I'll report if I can gather informations

Workaround can be used by disabling safe sleep (hibernation). Be carefull at your battery life during regular sleep as you will loose your open documents if you let your mac too long without power.

command is :
sudo pmset -a hibernatemode 0
