charmhub: set default channel in charmhub to correspond to 1.9/stable

Context

As part of #895 (comment), we should change the default channel of the charms and the bundle to 1.9/stable.
We could also investigate the possibility of tackling other points of that issue like:

• Hide latest/stable in both bundle and charms
• Let’s deprecate/remove/hide the 1.7 (and previous unmaintained) tracks for both bundle and corresponding charms

although those are not required as part of this task.

What needs to get done

Update default channel in charmhub for all charms and bundle.

Definition of Done

All charms have default channels corresponding to 1.9/stable bundle.
