I propose to remove the current 3.0.x. branch and develop the following features:

Drop 5.x PHP support (^7.1)
Upgrade composer dependencies
Remove symfony/config and symfony/dependency-injection composer dependency
Remove \Bitpay\Autoloader

I prefer not dropping the support of 5.x it will likely break existing deployments.
Fine with the rest though.
