Hosting behind Traefik

Possibly related to #46 but I preferred to open a new discussion specifically targeting Traefik.

I intend to document the process of setting up Traefik in front of the PDS on this issue, but if anyone comes across this and has some directions, tips, or anything that could help during the journey, please let us know here!

1. Starting point is to play with replacing the Caddyfile from https://github.com/bluesky-social/pds/blob/main/installer.sh#L320C1-L320C37 with Traefik, as people have been doing with Nginx.
