Investigate hourly pool snapshots #804

Quant amm is requesting hourly pool snapshots (stored for 7 days) with the following data:

tokenBalances
feesHourly
sharePrice
timestamp
totalShares
bptRate

We should investigate whether we can introduce this as the new standard both for v2 and v3 for pool snapshots in general, and store them forever.

We need to check how that affects the Frontend.

@mendesfabio would it be possible to introduce hourly snapshots in the subgraph?

Will be introduced in the newest deployment as a new type HourlyPoolSnapshot
