Investigate aggregate pool stats

We have been asked to provide aggregate data per pool type.

Specifically, if we can show all pool data such as TVL, 24h volume, 24h fee, etc aggregated for all cow pools.

We should at least try a generalized approach that would let us do aggregagtes over any pool type (or even any set of pool ids?)

It’s not an issue for the database itself, but it could potentially be for Prisma. However, we can create queries to expose that data with minimal overhead, as long as that the queried columns are properly indexed.
