To simplify building and testing, set the target java to 11.

Set compiler level to 11
Remove profiles in pom.xml
adjust github CI versions of java
Update Readme, (Android 12 API level 32)
Create migration guide
Clarify jvm / android requiments and support

Minimal support to older jvms/Android will be provided in 2.5.x and 2.0.x branches
