Incremental update for columns other than date

Hi there,
I'd like to know if it's possible to set the incremental update to be made based on other columns besides the date.
For example, if I'm pulling data from an API that provides multiple companies information (as example below), I'd need Airbyte to verify "symbol" and "updated".

"symbol" : "CompanyA",
"sharesNumber" : 3193635,
"weightPercentage" : 0.12,
"marketValue" : 489488436.450000048,
"updated" : "2021-10-14"

Is that possible? If yes, how can I do that?
