How to persist a connector version change when using docker compose?

Hello, when running airbyte locally with docker compose (via run-ab-platform.sh), and after upgrading the version of one of my connectors via the UI, I notice that if I shut down the containers and start them again (with the same command) the version of the connector has reverted to the old one. What is causing this and how can I make the change permanent?

Note: I'm trying to use a specific version and not the latest
