Add support for setting websocket subprotocols

Browsers don't currently allow setting custom headers for example to include CSRF like tokens in the websocket handshake request. But websockets do support a sub protocol that may be specified and one could potentially include a token through it.

Therefore it may be useful to expose this setting in the ServerBuilder interface.
