Prism should outline what data it collects through a Privacy Policy and Terms of Service page.

Just say you don't collect anything on the privacy policy :)
Something like this

If you use Prism, all data is saved on your device locally and is never sent to our server. We do not collect any personal data either.

Prism only connects to the internet to periodically check for new updates. You can disable this feature in Settings.

Also, good to mention that by using Prism you are subject to Microsoft, Mojang, Modrinth, Curseforge privacy policy & ToS.
