NOTE: I've tested the new configs for https://sandbox.dspace.org/server/ (which already exists) and verified that it is possible to run the UI on http://localhost:4000/ while using the sandbox as a backend. So, this appears to be working. |

Description
This PR is necessary to finalize the migration from https://demo7.dspace.org to https://demo.dspace.org (and https://sandbox.dspace.org)
It removes all mentions of https://demo7.dspace.org and https://api7.dspace.org from our codebase and configs.
On our
mainbranch, configurations will be updated to use https://sandbox.dspace.org, as this is the new demo site which will automatically sync with themainbranch.On our
dspace-7_xbranch, configurations will be updated to use https://demo.dspace.org, as this is the new demo site which will automatically sync with thedspace-7_xbranch. (This is handled in a separate PR againstdspace-7_x, see #2453)
